Combined they process the coffee of around one thousand smallholders, ensuring no one needs to travel further than 40 minutes with their cherry. Danche primarily services the higher altitude growers, whose plots are at such great altitude that harvest is late relative to other growers in the region. The longer maturation period is apparent in the quality and complexity of the coffee, making it my exact opposite (me being immature, low quality, and lacking any sort of depth according to the last few dates I went on). Well there I go, making everything about me again, I guess they were right and I have some serious reflecting to do. But don’t let my epiphany here take away from the ultimate point of this little write-up: Danche is an absolute banger of an Ethiopia natural, and there’s a reason we keep working with SNAP at their various washing stations. After picking, they are floated in water to remove any underdeveloped or lower-density fruit. Brix readings are taken at this stage to measure sugar content and confirm readiness for fermentation. The process begins with an 18-hour aerobic fermentation in open tanks, encouraging the initial development of flavour and aroma. Following gentle pulping, the coffee undergoes a second aerobic fermentation lasting 24 hours, further enhancing complexity and depth. Once fermentation is complete, the remaining mucilage is washed away, leaving clean parchment and promoting clarity in the final cup profile. Drying takes place in mechanical silos, where beans are carefully dried at a consistent temperature of 38 °C over 3 to 5 days. After drying, the coffee is stabilised in climate-controlled storage at 18–19 °C, helping maintain structure, preserve freshness, and protect its aromatic qualities.

Hazel Nuts is a natural Catuaí from Chinacla in the Marcala region of Honduras, grown by our longtime partners Marysabel Caballero and Moises Herrera. After brewing this coffee over the last few weeks, our team has decided a shift from cream to baking spices felt appropriate to better represent this lot and its true character. Grateful for the knowledge and experience gained, he was nonetheless driven by a personal ambition to establish his own coffee farm.

Now, at Quebraditas Coffee Farm, a venture he runs with his family, he cultivates exotic coffee varieties like Gesha, Bourbon Sidra, Ombligon, Eugenoids, Chiroso, and Laurina. Through close collaboration and direct sourcing, the team aims to showcase the unique character of Kamavindi’s coffees and the dedication behind every harvest.

//cdn.shopify.com/s/files/1/1002/0693/6448/files/Image-258_e5edede2-7c10-4094-80c2-2ee9b18023c3.jpg?v=1791280064
taith-el-oasis-washed-geisha-200g-colombia
Taith - El Oasis Washed Geisha 200g | Colombia

FARM

El Oasis is the result of a culinary dream that transformed into a coffee legacy. Founded by chefs Fernando Bocanegra and Pedro Lugo in the Bella Vista village of Ortega, at 2,150 metres above sea level, the farm focuses on expressing the full potential of the Gesha variety. With a commitment to genetic integrity and careful process innovation, El Oasis consistently delivers coffees that capture both heritage and modern craftsmanship.

PROCESS

The coffee undergoes a controlled 60-hour submerged fermentation in clean water tanks, with pH and temperature continuously monitored to encourage bright floral notes and a silky texture. After fermentation, the beans are thoroughly washed with fresh water to remove residual mucilage, creating a clean and crisp profile. They are then sun-dried on raised African beds for 10–14 days under controlled airflow, reaching a stable moisture level and enhancing clarity in the cup. Finally, the dried parchment is carefully stored to stabilize flavors before milling and export. Their wet mill sits just 800 metres away, so the cherries don’t travel far before processing. We’ve been sourcing coffee from the family for the past four years, including their natural Typica, Honey Dude. Golden Waffle is the same variety from the same farm, but processed as a honey. Side by side, it’s a nice way to see how differently the two lots can taste. They share some of the same sweetness, but Golden Waffle is cleaner and more caramel-like, with waffles and maple syrup in the cup.

//cdn.shopify.com/s/files/1/1002/0693/6448/files/4967296a-32ca-41d1-b94b-fa4cc73e8253-scaled.png?v=1791280181
