Produced by Wilder Lazo in Colombia, this washed-processed Sidra is the fresh crop of our earlier M3 release, refined and rebalanced to bring out a nuanced and lightly aromatic profile of anise, sweet plum, and parma violets.
Wilder Lazo is part of a new wave of Colombian producers pushing quality through precision and experimentation. Working across several farms in Huila, his focus on rare varieties and controlled processing reflects a background in genetics and agronomy. The result is a portfolio of coffees that feel both intentional and expressive, shaped by a clear understanding of what drives character in the cup.
