This 100% Red Bourbon peaberry coffee was processed using the fully washed method at Buf Café’s Nyarusiza & Remera washing stations, at 1,743 & 1,935 metres above sea level (respectively) in the south of Rwanda. The level of care that all Buf washing stations take over their processing is impressive. Cherries are hand-picked only when fully ripe and then pulped that same evening using a mechanical pulper that divides the beans into three grades by weight. The coffee is then fermented overnight. After a few additional steps, the beans are hand sorted a first time then a second time and then again a third time.
The green beans travel to Scotland where they are roasted with care at Williams & Johnson’s, especially for espresso. The end product is a very bright, sweet and clean coffee with tasting notes of red apple, blood orange, drinking chocolate and sugar cane.

Williams & Johnson have a strong connection with their growers, and showcase the people who grew their coffee on-site in order to emphasise where their ingredients came from and how they are made.
