The cherries are pulped and fermented in a tank for 12 hours. After that, the beans are washed and put into sealed barrels for anaerobic fermentation for another 8 hours after which they slow dry on raised African beds for about 25 to 30 days. It’s our second year purchasing this lot and we can honestly tell that the quality has jumped by a lot! It’s rare to see Rwandan coffees so uniform by size and without any quaker at all and this is exactly that and this really translates into the cup.
