Jose Ignacio Gomez’s farm is located in Vereda el Naranjal near the town of Buescao in the Nariño department. Paraiso’s Caturra variety of coffee grows at altitudes of 1900 meters above sea level and sees an average rainfall of 1800mm per year.

Jose grew up in a coffee producing family and has developed a good palate and an eye for good coffee. He grows coffee on six and a half hectares alongside oranges, lemons, and avocados. During the harvest, he, his family and team of trained harvesters hand pick the ripe red cherry and process the harvest in their own micro wet mill on the farm.

The excellent post harvest processing helps this coffee to shine with loads of sweetness, balanced by some juicy acidity. We experience delightful notes of nectarine, apple and sugar cane in the cup profile.

The farm itself has its own custom-built solar array for the drying of coffee beans after they are processed. The way it is structured is that three tiers of raised drying beds are stacked one on top of another under a plastic roof, allowing light to enter but protecting the beans from the most damaging of rays that could destabilise the drying process. The dryer is also oriented precisely so that crosswinds can pass through the array, allowing for temperature control in the area that the coffee beans are being dried.

Its initial collaboration with KOMBO, a company dedicated to curating food experiences, laid the foundation for Prolog’s enduring commitment to connecting coffee with the broader world of food. This partnership remains strong today, fostering a continuous dialogue with customers about the integral role of quality coffee in culinary experiences.
