Prolog Coffee began at the start of 2016, driven by a simple yet profound mission: to create a satisfying coffee experience for every customer, whether they’re enjoying a cup at the café or ordering coffee in bulk. The name – Prolog – reflects this mission, symbolising the ongoing journey of discovery and improvement. Every new challenge, every new opportunity to refine their craft, marks the beginning of a new chapter—a new prologue.
Founded by Sebastian Quistorff and Jonas Gehl, Prolog Café opened its doors in March 2016 in Copenhagen. Originally conceived as a temporary installation, the café quickly became a beloved fixture in the city’s specialty coffee scene. Its initial collaboration with KOMBO, a company dedicated to curating food experiences, laid the foundation for Prolog’s enduring commitment to connecting coffee with the broader world of food. This partnership remains strong today, fostering a continuous dialogue with customers about the integral role of quality coffee in culinary experiences.
At Prolog, quality is paramount, and they believe that true quality can only come from fair pricing. Prolog is deeply committed to maintaining close relationships with the farmers who grow their green coffee, ensuring that their hard work is properly valued. When direct relationships aren’t possible, they work with trusted importers who share their commitment to fair trade.
