This bioreactor mosto natural Gesha from Simon Brown in Peru is grown at 1950 masl and presents an elegant, high intervention profile, with notes of ripe apricot, gingersnap aroma and a delicate elderflower background.

Based in the Cajamarca region of northern Peru, Simon Brown works closely with smallholder producers across high-altitude growing areas known for their clean, expressive coffees. His approach centres on long-term relationships, selective harvesting and careful processing, with a focus on bringing structure and clarity to each lot without overworking the cup. The region’s cooler climate and dramatic elevation shifts contribute to slow cherry development, resulting in coffees with layered sweetness, vibrant acidity and a distinctly refined profile.

Meet the Maker

Module

Founded in Edinburgh in 2025, Module Roast is a deliberately small specialty coffee roastery born from the team behind Lowdown, the Edinburgh coffee shop established in 2016. After a decade spent building a multi-roaster café and developing a deep understanding of specialty coffee, the team created Module as a dedicated space to explore roasting with greater precision and freedom.

Module's approach is centred on precision, curiosity and flavour. The team works with carefully selected, often highly sought-after coffee lots, developing an individual roast profile for each one to highlight its particular characteristics. Roasting takes place on a Loring S7 Nighthawk, with colour measurement and sensory evaluation used alongside the roaster to maintain consistency and make small, informed adjustments from batch to batch.

Rather than maintaining a large, permanent catalogue, Module releases its coffees as a sequential series of limited editions. Each release represents another stage in the team's exploration of flavour; once a coffee sells out, it makes way for the next. This deliberately limited approach allows the team to work in small batches and give every coffee the level of attention that it deserves.

That attention to detail extends beyond the coffee itself. Module's packaging was developed by Edinburgh design studio Standard Format, drawing inspiration from utility objects such as toolboxes and luggage. Each release is housed in a rigid, functional box, with discontinued and repurposed paper stocks used for the early series, giving each edition its own identity while maintaining a consistent visual system.

At its heart, Module is an extension of the team's years of experience in Edinburgh's specialty coffee scene, but with a deliberately narrower focus. Every coffee is treated as an opportunity to understand how process, roasting and precision can shape flavour, resulting in limited releases that are as considered in their presentation as they are in the cup.
