Golden Waffle has been coming back to Dak for the past four years, and for good reason. This Typica from Ecuador makes an easy-going espresso that’s sweet but still very clean. Think waffles, maple syrup and cookies. A coffee we know well and always like having around.

The Crespo family bought Hacienda Pillcocaja twelve years ago and built the operation with a focus on keeping everything close to the farm. Their wet mill sits just 800 metres away, so the cherries don’t travel far before processing. We’ve been sourcing coffee from the family for the past four years, including their natural Typica, Honey Dude. Golden Waffle is the same variety from the same farm, but processed as a honey. Side by side, it’s a nice way to see how differently the two lots can taste. They share some of the same sweetness, but Golden Waffle is cleaner and more caramel-like, with waffles and maple syrup in the cup.

Dak Coffee Roasters was founded by Louis-Philippe Boucher & Veronique Lagarde in 2019. Originally from Montreal, Canada, the duo roamed around Europe for more than 8 years before settling in Amsterdam where they founded the roastery. Dak means "roof" in Danish, and it was a moment in 2019 when Louis-Philippe was sitting on the roof of his home, drinking coffee when he decided to start his own roastery. Dak now consists of a small team of six
