This is a new harvest and refined version of the well known Coco Bongo, a coconut co-fermented Caturra! This harvest is produced by Finca Milan and tastes as delicious as previous ones. Full of fresh coconut, vanilla milkshake and pineapple juice. For this particular coffee, our filter roast performs fantastic for espresso as well and therefore we use the same roast for both options. A label ‘omni’ will appear on your box for this reason.

Finca Milan uses an innovative fermentation method known as culturing, which works similarly to the process of making yogurt, to intensify the flavours and aromas of their coffee beans. This method involves introducing starter cultures containing beneficial microorganisms to initiate the transformation of the coffee. The cultures are blended with locally sourced fruits and aromatic plants, and then combined with the coffee for fermentation. For this coffee, freshly picked coffee beans were mixed with a starter culture and coconut. This mixture was placed in airtight containers for 144 hours, allowing anaerobic fermentation to take place. The local microorganisms and bacteria played a crucial role throughout the fermentation. Finca Milan carefully tracked important factors such as pH, temperature, and sugar content during the process. Once fermentation was complete, the beans were washed and dried—spending 25 days in the sun and an additional five days using mechanical drying methods.

Dak Coffee Roasters was founded by Louis-Philippe Boucher & Veronique Lagarde in 2019. Originally from Montreal, Canada, the duo roamed around Europe for more than 8 years before settling in Amsterdam where they founded the roastery. Dak means “roof” in Danish, and it was a moment in 2019 when Louis-Philippe was sitting on the roof of his home, drinking coffee when he decided to start his own roastery. Dak now consists of a small team of six

Coffee has always been part of our lives, although our love for specialty coffee has grown exponentially in the past few years. After working many years respectively in Finance & Marketing, we decided to pursue our dream, opening a coffee roastery. Dak was born from true passion for coffee and the desire to embark on a journey of endless discoveries.

We select our coffees based on their unique tasting profiles and of course that are 100% fully traceable. We partner with importers that share our values and we roast each one of our coffees carefully to bring the best flavours they have to offer.
