This one is for the delicate Geisha lovers, those who appreciate a refined and elegant Colombian Geisha. From Henry Bonilla of Finca El Arrayán, this washed Geisha reveals red tea characteristics reminiscent of rooibos, with florals of hibiscus and orange blossom, and a gentle jasmine sweetness throughout. A coffee that’s graceful, aromatic, and beautifully composed.

The cherries are first collected and submerged in water to remove floaters. They then undergo a two-day oxidation in cherry, sealed in bags. Afterward, they are dry-depulped to retain the mucilage for a second two-day fermentation in tanks. Once complete, the coffee is washed in fresh water for 10–15 minutes and then dried in a controlled room for eight days, until reaching 11% humidity.

MEET THE ROASTER

Dak Coffee Roasters

Dak Coffee Roasters was founded by Louis-Philippe Boucher & Veronique Lagarde in 2019. Originally from Montreal, Canada, the duo roamed around Europe for more than 8 years before settling in Amsterdam where they founded the roastery. Dak means “roof” in Danish, and it was a moment in 2019 when Louis-Philippe was sitting on the roof of his home, drinking coffee when he decided to start his own roastery. Dak now consists of a small team of six.

Coffee has always been part of our lives, although our love for specialty coffee has grown exponentially in the past few years. After working many years respectively in Finance & Marketing, we decided to pursue our dream, opening a coffee roastery. Dak was born from true passion for coffee and the desire to embark on a journey of endless discoveries.

We select our coffees based on their unique tasting profiles and of course that are 100% fully traceable. We partner with importers that share our values and we roast each one of our coffees carefully to bring the best flavours they have to offer.
—Louis-Philippe & Veronique
