Discover coffee that shows how precise processing can transform a cup into an unforgettable experience. Take, for example, this coffee from Colombia by DAK Coffee Roasters, which is the result of a multi-stage fermentation method with yeast inoculation, allowing the complexity and sweet aftertaste to fully develop. The resulting cup harmoniously combines the sweetness of chocolate milk with notes of cherry liqueur and a subtle hint of vanilla, ideal for everyday enjoyment.

The Finca El Encanto farm is located in the Pitalito area of Colombia’s Huila region, at an altitude of 1550 to 1620 meters above sea level, which provides ideal conditions for growing specialty coffee. The history dates back to the purchase of the original 45 hectares of land, which were subsequently divided among subsequent generations of the family. The farm emphasises modern approaches to cultivation, proper fertilisation, and precise processing of coffee cherries, including fermentation, roasting, and sensory analysis. These practices result in unique flavour profiles that reflect the specific terroir of the Huila region. Cooperation with specialty coffee importers allows coffee from Finca El Encanto to reach the international market and offer coffee lovers an authentic Colombian experience.

A multi-stage, carefully controlled fermentation method was chosen for this particular lot. First, only fruits at optimal ripeness are harvested, with lower-quality cherries being discarded during the initial sorting. This is followed by 40 hours of hermetically sealed anaerobic fermentation, followed by 30 hours of aerobic fermentation. The cherries are then placed in a closed tank for 36 hours of fermentation with the addition of yeast. After fermentation, they undergo heat shock, followed by 5 days of sun drying and another 20 hours of mechanical drying to achieve the desired moisture content. The dried cherries are then left to rest for 10 days to optimise flavour development and stabilise moisture content. Finally, the parchment skin is mechanically removed.

Dak Coffee Roasters was founded by Louis-Philippe Boucher & Veronique Lagarde in 2019. Originally from Montreal, Canada, the duo roamed around Europe for more than 8 years before settling in Amsterdam where they founded the roastery. Dak means “roof” in Danish, and it was a moment in 2019 when Louis-Philippe was sitting on the roof of his home, drinking coffee when he decided to start his own roastery. Dak now consists of a small team of six.

Coffee has always been part of our lives, although our love for specialty coffee has grown exponentially in the past few years. After working many years respectively in Finance & Marketing, we decided to pursue our dream, opening a coffee roastery. Dak was born from true passion for coffee and the desire to embark on a journey of endless discoveries.

We select our coffees based on their unique tasting profiles and of course that are 100% fully traceable. We partner with importers that share our values and we roast each one of our coffees carefully to bring the best flavours they have to offer.
